So what makes our eggs different?
Well, first and foremost- The difference is in where they are raised.
In the spring, summer and fall, our egg layers live on pasture in a clean and healthful environment, where a huge variety of both greens and bugs are available for them to eat every day! This boosts both the quality and nutrition of the egg itself, and gives you, as the consumer the peace of mind that the birds are being humanely treated. When winter comes, they are housed in the barn, with more than enough room to roam around and stretch their legs.
How is nutrition form pastured eggs better?
More and more people are realizing that what you put into an animal affects what you get out. In a 2008 egg test, conducted by Mother Earth News, eggs from 14 flocks of birds from across the country which had broad access to pasture were evaluated in a lab to compare their nutritional values with those of "conventional" eggs. Pastured eggs won hands down! Here are some of their findings.
Pastured Eggs had on average:
-1/3 less cholesterol
-1/4 less saturated fat
-2/3 more vitamin A
-2 times more omega-3 fatty acids
-3 times more vitamin E
-7 times more beta carotene
How do they taste?
Great! Our eggs tend to have a different flavor than conventional eggs, again because of the healthy variety in their diets. You'll notice that, especially in the spring, the yolks can be a bright orange. This is normal and shows that the chickens have been enjoying the nutrition of the great outdoors.
