Spiced Grilled Tenderoin

Spice Mix:

1 ½ tsp pepper

1 ½ tsp ground allspice

1 tsp salt

¾ tsp ground cinnamon

¾ tsp ground cloves

½ tsp ground nutmeg

1 T olive oil

Elk tenderloin (1 lb)

In a small bowl, combine spice mix ingredients. Add oil and mix well to make a paste. Rub all sides of tenderloin evenly with spice paste. Set aside.

Prepare grill for medium direct heat. Place tenderloin on cooking grid. Grill for 12 to 14 minutes, or until meat reaches desired doneness, turning tenderloin occasionally. Let stand for 5 minutes before slicing.
